Cooking method:
- Preheat the oven to 200°C/400°F/Gas Mark 6.
- Rub the leg of lamb with half a lemon, salt and pepper and dried herbs.
- Place in a roasting tin containing the olive oil, sprinkle with the fresh herbs, and add the garlic cloves around the bottom of the tin. Place in the oven.
- After 20 minutes turn the oven down to 180°C/350°F/Gas Mark 4 and roast for 1 hour 30 minutes.
- 45 minutes before the end of the roasting time, add the hilopittes (egg noodles) into the roasting tin.
- Stir in the lemon juice, add water to cover and return to oven.
- Check after 20 minutes to see if a little more water is required to just cover the pasta.
- Ready to serve.
